Ultimate Gluten Free Brownies


This brownie is my go-to recipe for anyone wanting a quick and easy sweet treat. Originally a friends recipe, I've adapted it slightly and made it my own, using dark brown sugar for a richer and deeper taste that really makes the chocolate sing. The fact it's gluten free is an added bonus and it tastes just as good and just as gooey as any other brownie... maybe even better!

INGREDIENTS

175g butter, softened
65g cocoa powder
340g dark brown sugar
2 eggs
100g gluten free plain flour
100g white chocolate chips

METHOD

Preheat the oven to 170˚C (fan). Cream together the butter and sugar, then add the cocoa powder. Beat in the eggs, then the flour and chocolate chips. Place mixture into a lightly greased 8" square tin. Bake for 25 minutes and allow to cool completely before cutting.

Eat warm with ice cream for an even more indulgent treat!
